The tea is roasted, brewed and then fermented using a proprietary SCOBY* that contains probiotics bacteria and yeast. The fermentation process produces a premium-quality Kombucha, which is spray-dried and microencapsulated to preserve the original nutrients and values. Various nutrients such as lactobacillus, glucuronic acids, antioxidants and polyphenols are produced during the fermentation process.
